Make a hearty meal from a veggie- and bean- packed soup.

tablespoons olive or vegetable oil

large onion, chopped

stalks celery, sliced

garlic cloves, minced

cups coarsely chopped cabbage

medium carrots, sliced

cups Progresso™ beef flavored broth (from two 32-oz. cartons)
2 cups water
1 1/2
teaspoons dried Italian seasoning

cups Green Giant™ Steamers™ frozen cut green beans

small zucchini, sliced
2
(15.5-oz.) cans red beans, drained, rinsed
3
oz. (1 cup) uncooked rotini (spiral pasta)

Steps

  • 1 Heat oil in Dutch oven over medium-high heat until hot. Add onion, celery and garlic; cook and stir 2 to 3 minutes or until onion is tender. Add cabbage, carrots, broth, water, Italian seasoning and pepper; mix well. Bring to a boil. Reduce heat; cover and simmer 15 minutes, stirring occasionally.
  • 2 Return to a boil. Add all remaining ingredients; mix well. Simmer, uncovered, for 10 to 15 minutes or until vegetables and rotini are tender, stirring occasionally. If desired, season to taste with salt and pepper.
