Three cheers for curry, chicken and couscous. They create a crunchy combo!

cup Green Giant™ Steamers™ frozen sweet peas

cup uncooked couscous

cup mayonnaise
1/3
cup orange juice

teaspoon curry powder

teaspoon salt

teaspoon ground red pepper (cayenne)

cups cubed cooked chicken
1/4
cup sliced green onions
1/4
cup golden raisins
1/4
cup slivered almonds

Steps

  • 1 In medium saucepan, combine water and salt. Bring to a boil. Add peas; return to a boil. Remove from heat; immediately stir in couscous. Cover; let stand 5 minutes. Fluff couscous with fork; cool 20 minutes.
  • 2 Meanwhile, in small bowl, combine mayonnaise, orange juice, curry powder, salt and ground red pepper; blend well.
  • 3 In large bowl, combine cooled couscous and peas, and all remaining ingredients. Pour dressing over salad; toss gently to coat. Cover; refrigerate at least 30 minutes to blend flavors.
