apples, peeled, cored and cut in wedges
1/4
cup butter
1/4
cup packed brown sugar

Old El Paso® flour tortillas for soft tacos & fajitas (6 inch)
Cooking spray
Vanilla ice cream
1/4
cup caramel sauce, warmed

  • 1 Heat oven to 450°F. Spray 8- or 9-inch (2-quart) square baking dish with cooking spray.
  • 2 In 10-inch skillet, heat apples and butter over medium heat 5 to 7 minutes or until apples are tender. Add brown sugar, and cook until melted.
  • 3 Spoon one-fourth of the apples on each tortilla, and roll up. Place seam side down in baking dish. Spray tops of enchiladas with cooking spray.
  • 4 Bake 10 to 15 minutes or until golden brown.
  • 5 Serve with ice cream and drizzled with caramel sauce.

Pears or peaches can also be used in this recipe.

Any crisp apple will work in this recipe. I used Fuji apples.
