Ingredients

  • 1 1/2 cups Progresso® chicken broth (from 32-oz carton)
  • 1 cup uncooked long-grain white rice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 package (20 oz) boneless skinless chicken thighs, cut in 1-inch pieces
  • 1 package (10 oz) fresh broccoli florets (about 4 cups)
  • 1 cup shredded sharp Cheddar cheese (4 oz)

Steps

    Spray 6-quart Instant Pot® insert with cooking spray. Mix broth, rice, salt and pepper in insert.

    Stir in chicken and broccoli. Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 10 minutes. Select CANCEL. Set pressure valve to VENTING to quick-release pressure.

    Stir in cheese. Broccoli will break down when stirring.

  • While precut bagged broccoli florets make an easy shortcut, you can also cut your own. One large head of broccoli will provide plenty of florets for this recipe.
  • We used chicken thighs instead of chicken breasts in this Instant Pot® cheesy chicken and rice recipe so that the chicken is still tender by the time the rice is cooked through.
