Cool, crunchy and refreshing, this quick-to-fix relish complements an assortment of sandwiches.

Ingredients

cups finely chopped cabbage

cup white or cider vinegar

medium cucumbers, shredded (3 cups)

Steps

  • 1 Mix all ingredients in large bowl. Spoon into 1-quart jar and 1-pint jar.
  • 2 Cover and refrigerate at least 24 hours but no longer than 2 weeks.

Expert Tips

To chop cabbage, place flat side of 1/4 head of cabbage on cutting board. Cut into thin slices with large sharp knife. Cut slices several times to make smaller pieces.
