Ingredients

  • 2 cups chopped cooked chicken
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 1/2 cup chopped green onions
  • 1 packet (.85 oz) Old El Paso™ Chicken Taco Seasoning Mix
  • 1/4 teaspoon ground red pepper (cayenne), if desired
  • 1 package (16 oz) Kraft™ Velveeta™ original prepared cheese product, cut in 1/2-inch cubes
  • 2 tablespoons chopped fresh cilantro leaves
  • Tortilla chips, as desired

Steps

  • 1
    Spray 3- to 4-quart slow cooker with cooking spray. In slow cooker, mix chicken, tomatoes, chiles, green onions, taco seasoning mix and red pepper.

    Top chicken mixture with Velveeta™ cheese; do not stir. Cover; cook on Low heat setting 2 1/2 to 3 1/2 hours or until cheese melts and mixture is hot (at least 165°F in center).

    Stir.
  • 4
    Top with cilantro. Serve with tortilla chips.

    Placing the cheese on top of the chicken mixture keeps the chicken moist and also keeps the cheese from burning if it touches any hot spots in the slow cooker.
  • tip 2
    If you’d like keep the dip in the slow cooker on Warm setting for your party, stir cilantro into the dip instead of sprinkling over the top.
