can (28 oz) Muir Glen® organic diced tomatoes, undrained

cups Progresso® chicken broth (from 32-oz carton)

tablespoons grated gingerroot

tablespoons tomato paste

teaspoon crushed red pepper flakes

lb sweet potatoes (3 medium), peeled, cubed (about 4 cups)

lb small red potatoes (about 12), cut into eighths (about 2 1/2 cups)

  • 1 Spray 5- to 6-quart slow cooker with cooking spray. In cooker, layer all ingredients, spooning peanut butter in dollops.
  • 2 Cover; cook on Low heat setting 8 to 10 hours. Break up chicken before serving.

Tomato paste is available in tubes and cans. Look for it in the supermarket next to the canned tomato products.

This is an incredibly flavorful stew, and one of my fav Pillsbury recipes -- I've made this at least a dozen times. I personally prefer using chunky peanut butter (& I'll confess, I always add a little more than called for). The combination of different flavors is phenomenal. Highly recommend!

I made this recipe for my somewhat picky family and they loved it!! I substituted canned sweet potatoes for fresh ones and ginger from the spice cabinet and used my own canned tomatoes. Will definately make this one again!!

This is a great recipe! It is easy to make using (most) ingredients that you will probably have at home. I thought the name if the recipe was kind of misleading though...it was more of an Indian Curry flavor. The red pepper flakes give it just the right amount of "kick"...but easily adjusted to your taste. Be sure to serve it with a nice loaf of bread so you can get all of the flavors from the sauce! Definitely will make this one again!
