cups uncooked green lentils

tablespoons olive oil
2
cups chopped red onions
1/4
cup garlic cloves, finely chopped
2
cups Old El Paso® Thick 'n Chunky Salsa
1
(4.5-oz.) can Old El Paso® Chopped Green Chiles
1
(1-oz.) pkg. Old El Paso® Taco Seasoning Mix
1
teaspoon salt
1
cup chopped fresh cilantro

  • 1 In large saucepan, bring 6 cups water to a boil over high heat. Add lentils; boil 10 minutes or until tender, stirring occasionally. Drain.
  • 2 Heat oil in large saucepan over medium heat until hot. Add onions and garlic; cook and stir until tender. Add lentils and all remaining ingredients except cilantro; mix well. Bring to a boil. Reduce heat to medium-low; cover and simmer 15 minutes or until thoroughly heated, stirring occasionally.
  • 3 Add cilantro; mix well. Remove from heat. If desired, serve with hot cooked brown or white rice.

I was very disappointed. either I over cooked it, or it comes out mmushy!! it is NOT a leeper, at least for My family!, ;-(

Made this for the hubby and I and realized it had eight servings! Whoops. So I froze 1/2 the the lentil mix. What I liked about this meal is that is it's easy on the wallet. I used medium salsa to kick it up a notch- and it really delivered. I was worried that I didn't boil the lentils long enough, so I added the veggie broth (about 1/4 cup) during the final stages. Overall, really happy with how it turned out! Yum! I just shared some of the leftovers with my co-workers today and they both wanted the recipe. :)

I have made this receipe many times. Makes a large batch. Freezes well. Good dish for a vegetarian and as a base for shepard's pie, or 'sloppy joe'

This dish is fabulous. There is a lot of room for modifying the ingredients too. Very satisfying and healthy - definitely a keeper!
