flour tortillas (7 inch)

teaspoons fat-free mayonnaise

oz thinly sliced cooked ham, cut into strips
1
can (8 oz) crushed pineapple, well drained
1/2
cup chopped green bell pepper
1/4
cup finely shredded mozzarella cheese (1 oz)

  • 1 In 12-inch nonstick skillet, place tortilla. Spread with 1 teaspoon of the mayonnaise. Top with half of the ham, pineapple, bell pepper and cheese. Top with second tortilla.
  • 2 Cook over medium heat 2 to 4 minutes, turning once, until lightly browned. Remove from skillet.
  • 3 Repeat to make second quesadilla.

Brighten up the plate by adding wedges of cantaloupe.

Give your quesadillas an extra Hawaiian touch by adding 1 teaspoon flaked coconut to the filling for each quesadilla.

I made this and everyone loved it. I didn't have any green peppers on hand so I made it without. I am not sure if I will bother to add them the next time as it tastes great without. I also used more cheese than called for. Make sure to drain the pineapple well.
