Fettuccine with Two Cheeses

oz uncooked fettuccine

slices bacon, cut into 1/4-inch pieces
1/2
cup butter, cut into pieces
1/2
cup half-and-half
1/2
cup shredded Parmesan cheese (2 oz)
1/2
cup crumbled Gorgonzola cheese (2 oz)
1/2
teaspoon cracked black pepper
1
tablespoon chopped fresh basil

  • 1 Cook and drain fettuccine as directed on package. Meanwhile, in 10-inch skillet, cook bacon over medium-high heat until crisp; drain on paper towels. Discard drippings.
  • 2 In same skillet, heat butter and half-and-half over medium heat, stirring frequently, until butter is melted and mixture starts to bubble. Reduce heat to low. Simmer 6 minutes, stirring frequently, until slightly thickened; remove from heat. Stir in cheeses, pepper and bacon.
  • 3 In large serving bowl, toss fettuccine with cheese sauce until well coated. Top with basil.

Expert Tips

Try other cheese combinations, such as shredded Asiago and crumbled blue cheese, in place of the Parmesan and Gorgonzola.

A 9-oz package of refrigerated fettuccine can be substituted for the dried fettuccine.

I am not a big fan of blue cheese type cheeses, but this was actually very good. It is quick and easy to make and I almost think it had more flavor once I had a chance to eat the leftovers. Try it even if you are unsure, it changed my perspective!

It was really good. It is good with peas in it and I side of broccoli too! The Gorgonzola cheese is really strong

My husband is a big fan of meat at every meal so I wasn't sure if he'd go for this dish (yes, there's bacon but not much). He loved it and so did the kids! It was very easy to make too. I will definitely keep this in my "go to" list of quick and delicious dinners.
