(18.25-oz.) pkg. yellow cake mix
1/2
cup margarine or butter, softened

egg
3
cups miniature marshmallows

Topping

1/2
cup light corn syrup
1/4
cup sugar
1/4
cup firmly packed brown sugar
1/2
cup creamy peanut butter
2
teaspoons vanilla
2
cups crisp rice cereal
2
cups salted peanuts
1
cup candy corn

  • 1 Heat oven to 350°F. In large bowl, combine cake mix and margarine; mix well. Stir in egg; blend well. Press mixture in bottom of ungreased 15x10x1-inch baking pan.
  • 2 Bake at 350°F. for 10 to 14 minutes or until set and light golden brown around edges.
  • 3 Remove pan from oven; immediately sprinkle with marshmallows. Return to oven; bake an additional 1 to 2 minutes or until marshmallows just begin to puff. Cool while preparing topping.
  • 4 In large saucepan, combine corn syrup, sugar and brown sugar; blend well. Cook over medium heat, stirring constantly, until mixture comes to a boil.
  • 5 Remove from heat; stir in peanut butter and vanilla until well blended. Stir in cereal, peanuts and candy corn. Immediately spoon warm topping over marshmallows; spread to cover. Refrigerate 30 minutes or until firm. Cut into bars.

Awesome recipe, you can't eat just one! I totally disagree with the reviewer who said to omit the candy corn, though we did decide for appearance we would not mix in the candy corn, but put the candy corn on top as a decoration for each bar, presentation is nice.

Wonderful recipe, reminded me of a dessert at the college cafeteria. I used to make this all the time but I lost the recipe. I would definately omit the candy corns. but you can also use cashews. but this recipe is really good. fit it to your liking. I also used 1/2 c. brown sugar instead of 1/4 c. white and a 1/4 c. brown.
