Directions

  • 1 Heat oven to 350°F. Lightly grease cookie sheets or line with parchment paper. In large bowl, combine brownie mix and coconut; mix well. Add water, oil and egg; stir until moistened. Shape dough into 1 1/2-inch balls. Place 3 inches apart on greased cookie sheet; flatten slightly.
  • 2 Bake at 350°F. for 12 to 15 minutes or until edges are set. (Centers will be soft.) Remove from cookie sheets.

These were OK. I couldn't find the same size of brownie mix, so had to adjust liquids just a little. Also, should have added the coconut extract. Couldn't really taste much coconut. Will make again with adjustments.

I made these for a party and everyone was raving about them. Everyone wanted another cookie and the recipe before I left. They were easy to make and oh so good!

OH my goodness, I just made a batch of these a half hour ago, and they are all GONE!!! This is an exceedingly simple cookie to make, and amazingly delicious, as well! I made some that were nice and large, and also a cookie sheet full of smaller ones for the tiny people i cook for... my 1 year old nephew freaked out, he loved them so much! I suggest this for families w/ small children, or families who like to eat together!

I was looking for a "cookie" that would hold for shipping. Wow these are so good and easy. I did add a teaspoon of coconut extract since I'm a coconut lover.

These are fabulously easy and fabulously delicious. Everyone, EVERYONE who tastes these want the easy recipe. Even people who don't like cocoanut LOVE these cookies. Hail to the chef! jmgd
