package (8 oz) cream cheese, softened

cup shredded Swiss cheese (2 oz)

tablespoons chopped green onions (2 medium)

can (12 oz) Pillsbury® Grands!® Jr. Golden Layers® refrigerated biscuits

  • 1 Heat oven to 375°F. Spray 10 regular-size muffin cups with CRISCO® Original No-Stick Cooking Spray. In 8-inch skillet, cook bacon until crisp. Drain on paper towels. Crumble bacon; set aside.
  • 2 Meanwhile, in small bowl, beat cream cheese until smooth. Gradually add milk and eggs, beating at low speed until smooth. Stir in Swiss cheese and onions. Set aside.
  • 3 Separate dough into 10 biscuits. Press or roll each to form 5-inch round. Place 1 biscuit round in each muffin cup; firmly press in bottom and up sides, forming 1/4-inch rim. Place half of bacon in bottom of dough-lined muffin cups. Spoon cheese mixture evenly into cups.
  • 4 Bake 21 to 26 minutes or until filling is set and edges of biscuit cups are golden brown. Sprinkle each with remaining bacon; lightly press into filling. Remove biscuit cups from pan.

These went over very well. I served them for dinner with some fresh fruit. Will make again.

I make these a lot. I substitute ham and/or sausage for bacon, add finely chopped peppers in several colors, scallions and seriously sharp cheddar(I buy shredded Cabot ) or Swiss or pepper jack. I do in mini muffin cups for brunch buffet. Leftovers reheat nicely in microwave.

The filling was good, I was surprised at how light & eggy it was with only the two eggs. I didn't have bacon so used some turkey lunch meat, chopped it up & put it all in with the cheese. However, the biscuits got way too brown & burnt on the bottom & up the sides (where I couldn't see until it was too late). Had to throw them away.

To anyone who has tried this recipe: I would love to try these for a brunch but I'm confused about the eggs. Does it really require only 2 eggs? Just want to verify before trying. thanks

These are really good! I used mozzarella cheese instead of swiss and onion powder instead of diced onions. Will be making these again!
