Heat oven to 375°F. Generously spray 5 jumbo muffin cups with cooking spray. In medium bowl, mix apples, raisins, apricots, lemon juice and 1/2 teaspoon of the apple pie spice.
Set icing from cinnamon rolls aside. Separate dough into 5 rolls; using serrated knife, cut each roll in half crosswise. Place roll bottoms, cut sides up, in muffin cups. Divide apple mixture evenly among cups. Place roll tops, cut sides down, on apple mixture. Sprinkle with sugar.
Bake 20 to 22 minutes or until golden brown. Cool 10 minutes. Place waxed paper under cooling rack; carefully remove buns from pan to cooling rack.
In small bowl, mix reserved icing and remaining 1/2 teaspoon apple pie spice. Drizzle icing over buns. Serve warm.
