Szechuan Beef Lo Mein

Scrumptious beef and pasta meal with the rich flavor of Szechuan sauce is perfect for Asian cuisine that can be ready in 35 minutes.

Ingredients

lb boneless beef sirloin steak, cut into thin strips

medium onion, cut into thin wedges

cups fresh baby carrots, halved lengthwise

cups Progresso® beef broth (from 32 oz carton)

cup purchased Szechuan stir-fry sauce

tablespoons honey

cups uncooked fine egg noodles (4 oz)

cups fresh snow pea pods, trimmed, cut in half crosswise

cup chopped salted cashews, if desired
  • 1 Spray large nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add beef; cook and stir until browned. Remove beef from skillet; cover to keep warm.
  • 2 In same skillet, combine onion and carrots; cook and stir 2 minutes. Stir in broth, stir-fry sauce and honey. Bring to a boil. Reduce heat to medium-low; cover and cook 5 to 10 minutes or until vegetables are crisp-tender.
  • 3 Stir in egg noodles; cover and cook 5 to 10 minutes or until noodles are tender, stirring occasionally. Add beef and pea pods; cover and cook 3 to 4 minutes or until pea pods are crisp-tender. Sprinkle with cashews.
