Spring Chicken-Tortellini Casserole

pkg (19 oz) frozen cheese-filled tortellini
1
pkg (9 oz) Green Giant® frozen asparagus cuts
1
tablespoon margarine or butter
1/4
cup Progresso® Italian style bread crumbs
1
pkg (9 oz) frozen diced cooked chicken breast, heated as directed on package
1
jar (16 oz) Alfredo pasta sauce
2
tablespoons shredded fresh Parmesan cheese

  • 1 In Dutch oven, bring 4 quarts (16 cups) water to a boil. Add tortellini; return to a boil. Reduce heat to low. Add asparagus; simmer 3 minutes or until tortellini are tender. Drain.
  • 2 Meanwhile, in small nonstick skillet, melt margarine over medium-high heat. Add bread crumbs; stir to coat. Cook 1 to 2 minutes or until golden brown, stirring constantly. Remove from heat.
  • 3 Place cooked tortellini and asparagus in large serving bowl. Gently stir in chicken and Alfredo sauce. Top with bread crumbs; sprinkle with Parmesan cheese. Serve immediately.

Big hit with my family...including my 20 month old. Easy to prepare, which I like after working all day!

Kate wasn't joking when she said this is filling. I couldn't eat an entire plate and between my husband, son and I, we will have leftovers. Used boneless, skinless chicken breasts sautéed with onion powder, garlic powder and Italian seasoning; then diced. Must have garlic bread on the side with this and be prepared to take a nap afterwards!

My family and I enjoyed this. It was my first time trying jarred Alfredo sauce and we definitely enjoyed it. It is a very filling meal, though! I used broccoli instead of asparagus and that was good. I will try this again and probably add some mushrooms, too. It's very easy which is a bonus for weekdays. I spent the most time thawing and cooking my chicken because I didn't want to use frozen.
