Slow Cooker Spicy Chicken and Sausage Soup

Red pepper sauce adds a little "kick" to chicken and sausage in a tomato-based broth.

package (20 oz) boneless skinless chicken thighs, cubed

can (14.5 oz) diced tomatoes, undrained

cups Progresso® chicken broth (from 32-oz carton)

teaspoon red pepper sauce

lb cooked kielbasa, sliced

cup frozen bell pepper and onion stir-fry (from 1-lb bag), thawed

cup uncooked instant white rice

  • 1 In 3- to 3 1/2-quart slow cooker, mix chicken, tomatoes, broth, water and red pepper sauce.
  • 2 Cover; cook on Low heat setting 8 to 10 hours.
  • 3 Stir in kielbasa, stir-fry vegetables and rice. Increase heat setting to High. Cover; cook 10 to 15 minutes until rice is tender.

Even though I changed this recipe up a bit (no choice but to do so), I wanted to come and rave about it. I'm currently in Afghanistan and there is no supermarket. The only meat I can get is already cooked, and I have my husband send me some canned goods (I love to cook, so I ordered a crockpot-no stoves or ovens to use). The sausage and chicken I used is already cooked. I added a can of diced jalapenos because someone had an extra little can. I also didn't have chicken broth or uncooked instant rice, so I used a package of Lipton Chicken Flavored Rice. I also pretty much doubled or tripl

This is a great base to start with. I used boneless chicken breasts since thats what I had on hand. I used andouille sausage. I put sausage, peppers, onions all at the same time with the rest of ingredients. I also added some potatoes diced and seasoned with black pepper, creole seasoning, and garlic herb spice. Cooked for 8 hours then added rice and some file for the last 15 min. A little kick but nice and hearty. Will make it again

Instead of rice I use either a large bag of frozen peas or 2 cans of white beans, which I add to the slow cooker with the chicken and sausage. A little less broth and I also add spinach. It has become a family favorite and definitely a comfort food!
