large carrots, cut into 1/2-inch slices

medium red bell pepper, chopped (1 cup)

cup sliced fresh mushrooms (3 oz)

cloves garlic, finely chopped

tablespoon Italian seasoning

teaspoon salt

teaspoon pepper

can (28 oz) crushed tomatoes, undrained

cups uncooked penne pasta (about 12 oz)
Shredded Parmesan cheese, if desired
Chopped fresh Italian (flat-leaf) parsley, if desired

  • 1 Spray 3 1/2- to 4-quart slow cooker with cooking spray. Place chicken in slow cooker. Top with remaining ingredients except pasta, cheese and parsley.
  • 2 Cover; cook on Low heat setting 6 to 8 hours. About 30 minutes before chicken is done, cook and drain pasta as directed on package.
  • 3 Serve chicken with pasta. Garnish with cheese and parsley.

If you enjoy spicy food, add 1/4 teaspoon crushed red pepper flakes with the other seasonings.

Chicken thighs are a great choice for slow cooking, as the dark meat stays moist and flavorful. Boneless skinless thighs are now readily available at most grocery stores. If you prefer, you can substitute 2 lb boneless skinless chicken breasts.

Try whole grain penne or another whole grain pasta shape for added nutrition. Or instead of pasta, serve this chicken with garlic mashed potatoes.

I made this for dinner tonight. We both agreed it was awful. It was tasteless. Way to bland with no flavor. This will be one recipe I will not be making again!

what about using frozen breasts? i use them alot with slow cooker meals i freesze.

Jordon59, Hope this isn't too late, dredge your chicken in flour, then lightly braise in EVOO, Canola or Sunflower oil, then add rest of ingredients except pasta, simmer over very low heat for 1 hr. Water or white wine may be added because using the flower may cause too much thickening. That's why the low temp and long cooking time. Instead of pasta and the other suggestions from original recipe, try brown and wild rice mixed together.

Can someone post the recipe to make this the conventional way and not in a slow cooker? Recipes should have an alternate for those who do not use a slow cooker.

Note to KKipe. The carrots are listed. 2nd ingredient. You must have just missed it.
