I meant to give this 5 stars, not 3!

Made this yesterday and followed most of the recipe. I didn't' have creamed corn so used niblets (which we actually prefer) and I doubled up on broth, potatoes, milk, soup, cumin & onions. Also, I cooked it on the stove not in a crockpot. Served it with cornbread---delicious! My husband says this one is a keeper.

Made this for dinner last nite. Enough for 2 adults & 2 teenagers, with a lil leftover. Did not use cilantro, dont like, Otherwise, followed recipe exactly. Had shredded cheese & oven cooked bacon crumbles as a topping for those that wanted it. this was really fantastic and so easy. nexttime i'll add more potatoes.

This is one of those recipes that is very forgiving. Just think what vegetable your family DOES like and throw it in. You needn't stick to ONE, even.

I have not tried this yet, but plan to soon, altho I will be using canned peas instead of corn. I think it will be just as good.
