Skin-On Mashed Potatoes

Ingredients

cups cubed (1 to 1 1/2 inch) unpeeled potatoes (1 1/4 lb)
1/2
cup plain low-fat yogurt
1/4
cup shredded Swiss or Gruyère cheese (1 oz)

tablespoons fat-free (skim) milk
1/2
teaspoon salt
1/8
teaspoon white or black pepper
2
medium green onions, sliced (2 tablespoons)

Directions

  1. 1 In 3-quart saucepan, place potatoes and enough water to cover. Heat to boiling. Reduce heat to medium; cover and simmer 15 to 20 minutes or until tender. Drain potatoes.
  2. 2 In same saucepan or large bowl, mash hot potatoes. Beat in yogurt, cheese, milk, salt and pepper with electric mixer on low speed until light and fluffy. Stir in onions.
