Salami Egg Bake

Ingredients

  • 4 oz. sliced salami, cut into thin strips
  • 2 tablespoons finely chopped red onion
  • 6 eggs
  • 1/4 cup milk
  • 1 (3-oz.) pkg. cream cheese, cut into 16 cubes
  • 1 cup mini bagel chips

    Heat oven to 325°F. In small nonstick skillet, cook salami and onion for 3 minutes or until onion is tender.

    In medium bowl, combine eggs and milk; beat well. Pour into ungreased 9-inch glass pie pan. Sprinkle cream cheese cubes evenly over egg mixture. Sprinkle salami-onion mixture over top. Place bagel chips around edge of pie pan.

    Bake at 325°F. for 25 to 35 minutes or until eggs are set. Cut into wedges to serve.

  • Salami is a coarse, dry, pork-and-beef sausage that is seasoned with garlic and cured rather than cooked. Kosher salami is an all-beef sausage that is cooked; it is a bit softer than Italian salami. Some popular Italian salamis include Genoa, which is studded with white peppercorns, and cotto, made with black peppercorns.
  • The breed of hen determines the color of its eggs. The color of the yolk is determined by what the hen eats: Hens that eat alfalfa, grass and corn produce eggs with lighter yolks than hens that eat wheat.
