Roasted Chicken with Peach Glaze

teaspoon garlic-pepper blend

cup peach or apricot preserves

  • 1 Heat oven to 375°F. Spray rack in shallow roasting pan with cooking spray. Rinse chicken inside and out with cold water; drain and pat dry with paper towels.
  • 2 Sprinkle garlic-pepper blend over chicken; place breast side up on rack in pan. Insert ovenproof meat thermometer so tip is in thickest part of inside thigh and does not touch bone.
  • 3 Bake uncovered 1 hour. Brush chicken with preserves; bake 35 to 45 minutes longer or until thermometer reads 180°F and legs move easily when lifted or twisted. Let stand 5 to 10 minutes before serving.

I used this basic recipe tonight to cook for my family. I used chicken breasts (3), fresh sliced peaches (3), and apricot butter since we didn't have preserves. I also rubbed the chicken in various spices, including cinnamon and ginger. It was delicious.

To make this even easier...less messy at meals, use chicken breasts, thighs or tenders in a baking dish. My fav is breasts...makes them more moist and I like to use apricot preserves.

It turned out great, very easy only three ingredients. Going to make some chicken salas with my left overs.

I am making this tonight. Instead of peach preserves I am going to us Apricot/Pineapple Preserves. Hope it tastes good>
