Super easy, yet super elegant. They were a huge hit, even among people who don't like coconut. I personally don't like white chocolate/chips, nor do I like iced cookies, so I left it off and I got no complaints. You could lightly dust with powdered sugar. My husband says they were the best cookie on the tray! We want to make them next with lime curd.
