Mediterranean Shrimp and Bow Ties

Ingredients

oz. (2 2/3 cups) uncooked bow tie pasta (farfalle)

tablespoon olive or vegetable oil

lb. shelled, deveined, uncooked medium or large shrimp
1/2
cup green onion pieces (1/2 inch)

garlic cloves, minced
1/2
teaspoon dried oregano leaves
1/4
teaspoon salt

tablespoons lemon juice
1/2
cup sliced kalamata or ripe olives

Directions

  1. 1 Cook pasta to desired doneness as directed on package. Drain.
  2. 2 Meanwhile, heat oil in large skillet over medium-high heat until hot. Add shrimp, onions and garlic; cook and stir 3 to 5 minutes or until shrimp turn pink. Remove skillet from heat.
  3. 3 Add cooked pasta and all remaining ingredients; toss gently to mix. Return to heat; cook 1 to 2 minutes or until thoroughly heated.
