can (11.3 oz) Pillsbury® refrigerated artisan dinner rolls made with whole grain*
1/2
cup chopped sun-dried tomatoes packed in oil, drained
1/3
cup crumbled feta or shredded mozzarella cheese
1/2
cup guacamole
1/4
cup canned sliced ripe olives

Directions

  • 1 Heat oven to 375°F. Spray 16 regular-size muffin cups with cooking spray. Separate dough into 8 rolls. Cut each roll in half; press halves in bottoms and halfway up sides of muffin cups.
  • 2 Top each with about 1 1/2 teaspoons tomatoes and 1 teaspoon feta cheese.
  • 3 Bake 14 to 17 minutes or until light golden brown. Remove from pan; top each with about 1 1/2 teaspoons guacamole, and sprinkle with olive slices. Serve immediately.

If you love kalamata olives, feel free to substitute for the ripe olives.

I substituted kalamata olives for the black olives and hummus for the guacamole, and also added a finely chopped cucumber garnish, for more authentic Mediterranean flavor. But that's sort of the beauty of this recipe (and so many others on this site) ~ they are easily customizable with whatever you happen to have in your kitchen! Really delicious, and the artisan rolls are amazing!!!

I've not tried this recipe yet but since I do not like guacamole but love sliced avocado, I think I'll add it to this recipe instead. I'd also add a bit of ketchup or chili sauce mixed with a bit of Worcestershire Sauce to top it off.
