Jerked Chicken Hoagies

Slow-cooked chicken sandwiches flavored with Caribbean seasoning - perfect for dinner!

Ingredients

tablespoons Caribbean jerk seasoning (dry)

lb boneless skinless chicken thighs

large red or green bell pepper, chopped (1 1/2 cups)

large onion, chopped (1 cup)

cup chicken broth
1/4
cup ketchup

hoagie buns, split
  • 1 Rub jerk seasoning generously over chicken thighs. In 3 1/2- to 4-quart slow cooker, mix bell pepper and onion. Place chicken over vegetables.
  • 2 In small bowl, mix broth and ketchup. Pour broth mixture over chicken.
  • 3 Cover; cook on Low heat setting 6 to 8 hours.
  • 4 Remove chicken from slow cooker; place on cutting board. Shred chicken with 2 forks; return to slow cooker, and mix well.
  • 5 To serve, with slotted spoon, spoon chicken mixture into buns.
