teaspoons garlic-pepper blend
1/2
cup butter or margarine, softened

tablespoon chopped fresh or 1 teaspoon dried basil leaves

tablespoons tomato paste

  • 1 Brush grill rack with vegetable oil. Heat gas or charcoal grill. Sprinkle chicken with garlic-pepper blend.
  • 2 Place chicken on grill. Cover grill; cook over medium heat 15 to 20 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F).
  • 3 In small bowl, mix remaining ingredients. Serve chicken topped with butter mixture.

Don't want to waste tomato paste when a recipe calls for a small amount? Use the squeeze tube version that can be refrigerated after being opened. Or spoon extra canned tomato paste in a 1-tablespoon-size dollop on a foil-lined cookie sheet and freeze until solid, then store in a resealable plastic bag in the freezer.
