Greens, Beans and Bacon Soup

slices bacon, cut crosswise into 1/4-inch pieces

cups packed chopped kale

1/4 cups water
1
can (15 oz) cannellini beans, drained, rinsed
1
can (14 oz) roasted garlic-seasoned chicken broth
1
cup frozen chopped onion
1/4 teaspoon pepper
Red pepper sauce, if desired

Directions

  1. 1 In large saucepan, cook bacon over medium-high heat 8 minutes or until crisp. Reserve 2 teaspoons drippings in pan; discard excess drippings.
  2. 2 Add kale, water, beans, broth, onion and pepper to bacon and drippings in pan. Stir in pepper sauce. Heat to boiling over high heat; reduce heat. Cover; simmer 25 minutes. Serve immediately.
