cups Fiber One® original bran cereal
1/3
cup water

egg

tablespoon vegetable oil

teaspoons vanilla

teaspoon ground cinnamon

tablespoons miniature semisweet chocolate chips

Directions

  • 1 Heat oven to 350°F. Spray cookie sheets with cooking spray. In large bowl, mix ingredients with spoon. Drop dough by rounded tablespoonfuls 2 inches apart on cookie sheets.
  • 2 Bake 10 to 12 minutes until set. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely, about 30 minutes. Store in tightly covered container.

I was skeptical prior to baking and was pleasantly surprised at the outcome. I used a reduced fat Brownie mix and needed to add an extra tablespoon of water because the Reduced Fat Brownie mix has a few more ounces of mix. My teenage sons thought they were awesome, they thought the crunch was from a rice-type cereal and had no idea it was from Fiber One cereal. Just two of these cookies definitely satisfy a chocolate sweet tooth!

You do not need the choc chips. These are wonderful and healthy.
