cup mashed potato flakes

cup grated Parmesan cheese

teaspoons dried parsley flakes, if desired

to 1 teaspoon garlic salt

(3 to 3 1/2-lb.) cut-up frying chicken, skinned if desired

cup margarine or butter, melted

Directions

  1. 1 Heat oven to 375°F. Grease, or line with foil and grease 15x10x1-inch baking pan or 13x9-inch pan.
  2. 2 In medium bowl, combine potato flakes, Parmesan cheese, parsley flakes and garlic salt; mix well. Dip chicken pieces in margarine; roll in potato flake mixture to coat. Place in greased pan.
  3. 3 Bake at 375°F. for 45 to 60 minutes or until chicken is fork-tender and juices run clear.
