Canadian Bacon and Pineapple Quesadillas

Quesadillas take on a new identity with this mild but flavorful combination of Canadian bacon, pineapple and cheese.

(8 to 9-inch) flour tortillas

to 1/2 cup pizza sauce
1/2
lb. sliced Canadian bacon, cut into small strips

(8-oz.) can pineapple tidbits in unsweetened juice, well drained

oz. (1 1/2 cups) shredded mozzarella cheese
  • 1 Place 2 tortillas on ungreased cookie sheet. Spread each with pizza sauce. Top with Canadian bacon, pineapple and 1 cup of the cheese. Top each with remaining tortilla.
  • 2 Broil 4 to 6 inches from heat for 1 to 2 minutes. With 2 pancake turners, carefully turn quesadillas over. Sprinkle tops with remaining 1/2 cup cheese.
  • 3 Broil an additional 1 to 2 minutes or until cheese is melted and quesadillas are light brown. Cut each into 6 wedges. If desired, serve with additional warm pizza sauce.
