I made this in my bread machine last night. I did make some changes... I used sliced almonds instead of walnuts, I used olive oil instead of vegetable oil (Healthy fats), and I added a teaspoon of pumpkin pie spice. Very tasty toasted with a little apple butter, and a great way to sneak veggies, fruits, and nuts into my kids' breakfasts!

Looking for a recipe that would use up some leftover canned squash, I decided to tinker with this one. It was more like an overhaul before I was done but this recipe was the catalyst for a very delicious squash-date bread. :) Substituted bread flour for the AP and chopped dates for the cranberries. Added 3 tsp. vital wheat gluten and 1 tsp of pumpkin pie spice. Omitted the walnuts. Based on experience with my bread machine, I also increased the yeast to 3 tsp and the water by 2 Tbsp. The result is a beautiful date bread that's superb for breakfast toast!
