Ingredients

1/4
cup butter or margarine, slightly softened

tablespoon chopped fresh cilantro
1/2
teaspoon grated lemon peel
1
pound salmon, snapper or other medium-firm fish fillets, about 1 inch thick
1/4
teaspoon salt
1/4
teaspoon ground cumin
1
tablespoon lemon juice

Directions

  • 1 Heat oven to 425°. Line rectangular pan, 13x9x2 inches, with aluminum foil; spray foil with cooking spray. Mix butter, cilantro and lemon peel. Cover and refrigerate butter while preparing fish.
  • 2 Cut fish into 4 serving pieces. Place fish, skin side down, in pan. Sprinkle with salt and cumin. Drizzle with lemon juice.
  • 3 Bake uncovered 15 to 20 minutes or until fish flakes easily with fork. Carefully lift fish from skin with pancake turner. Top each serving of fish with some cilantro butter mixture.

Expert Tips

For easy entertaining, just double this recipe. Serve the salmon on a bed of angel hair pasta or skin-on mashed potatoes on a pretty serving platter. Garnish the platter with cilantro sprigs and slices of lemon.

I am a big garlic lover so I added some garlic to this dish prior to baking and YUM! This is an easy recipe with amazing taste! Will definately make again.

This salmon recipe was pretty good, though I'm not big on the lemon flavor so I'll probably exclude the grated lemon the next time I make it. The lemon juice flavor is less noticeable so it doesn't bother me as much. I served my salmon over noodles with a little bit of garlic powder mixed in and mozzarella cheese on top. Overall the meal turned out to be pretty nice! :)
