In England, roast beef wouldn't be the same without Yorkshire pudding! The pudding, a cross between a popover and a souffle, is baked with drippings from the beef and should be eaten as soon as it emerges from the oven.

Ingredients

  • 1/4 cup roast beef drippings*
  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup milk

Steps

    Heat oven to 425°F. Pour beef drippings into ungreased 9-inch square pan; tilt pan to coat bottom and sides. Place pan in oven to heat about 2 minutes.

    In small bowl, beat eggs slightly. Add flour, salt and milk; beat just until blended. DO NOT OVERBEAT. Pour batter into hot pan.

    Bake at 425°F. for 15 minutes. Reduce oven temperature to 350°F.; bake an additional 10 to 15 minutes or until puffed and golden brown. Serve immediately.
