cups chopped peeled apples

cup whole wheat flour

cup packed brown sugar

cup skim milk

cup margarine or butter, melted
1/4
cup refrigerated or frozen fat-free egg product, thawed, or 1 egg, slightly beaten

Topping

cup packed brown sugar

tablespoon finely chopped nuts

teaspoon cinnamon

    Heat oven to 400°F. Grease bottoms only of 12 muffin cups or line with paper baking cups. In small bowl, combine 1/2 cup of the all-purpose flour and apples; stir until apples are well coated.

    In large bowl, combine remaining all-purpose flour, whole wheat flour, 1/2 cup brown sugar, baking powder, salt and 1/4 teaspoon cinnamon; mix well. Add apples and all remaining muffin ingredients; stir just until dry ingredients are moistened. Divide batter evenly into greased muffin cups.

    In small bowl, combine all topping ingredients; sprinkle about 2 teaspoons over each cup.

    Bake at 400°F. for 20 to 25 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan. Serve warm.

Expert Tips

  • Are some of yesterday's muffins left? Use them to make an impromptu "trifle" dessert. Fold chunks of muffin into vanilla pudding and top with a spoonful of whipped cream.
  • Pipe a spiral design on the top of each muffin with a glaze made of powdered sugar mixed with milk and a few drops of pure vanilla extract.
  • Try the recipe with chopped pear instead of apple.
