Whitefish with Honey Chive Sauce

Ingredients

Fish

teaspoon margarine or butter
1
lb. cod or orange roughy fillets (up to 1/2 inch thick), cut into 4 pieces
1/4
teaspoon salt, if desired

Sauce

1/3
cup chicken broth
1
teaspoon cornstarch
2
tablespoons fresh lemon juice
2
tablespoons honey
1/8
teaspoon pepper
2
tablespoons chopped fresh chives

    Spray large nonstick skillet with nonstick cooking spray. Melt margarine in skillet over medium-high heat. Sprinkle cod fillets with salt; add to skillet. Cook 4 to 5 minutes or until golden brown.

    Gently turn fish; slowly add 1/2 cup water. Reduce heat to medium-low; cover and cook an additional 4 to 6 minutes or until fish flakes easily with fork.

    Meanwhile, in small saucepan, combine broth and cornstarch until well blended. Add lemon juice, honey and pepper; cook, stirring constantly, until thickened and clear. Stir in chives.

    To serve, use slotted spoon to transfer fish to serving plates. Serve sauce over fish.

Expert Tips

  • For best color and flavor, add chives to sauces after they are cooked. Add even more color to your plate by garnishing the fish with lime and lemon wedges.
