Including cubed cooked chicken transforms the classic apple-celery-walnut combination into a satisfying main dish salad.
To determine how much uncooked chicken you'll need for a recipe that calls for cubed cooked chicken, follow these guidelines:
• One 2 1/2 to 3-pound fryer yields 2 1/2 to 3 cups.
• Two whole chicken breasts (1 1/2 lb. with skin and bones, 3/4 lb. without) yield about 2 cups.
• One 5-ounce can of chunk chicken (drained and flaked) yields 1 cup.
• Cooked turkey can be substituted for cooked chicken in any recipe.
Use both red and green apples, unpeeled, for pleasing color contrast.
