In medium bowl, combine egg product, milk, salt and Italian seasoning; beat well. Set aside.
Spray 10 or 12-inch nonstick skillet with nonstick cooking spray. Add sausage; cook and stir over medium heat for 8 to 10 minutes or until no longer pink. Drain well.
Add carrot and onions; cook and stir over medium heat for 2 to 3 minutes or until softened. Add zucchini; cook and stir an additional 2 minutes.
Add egg mixture to skillet; cover and cook over low heat for 8 to 10 minutes or until set, lifting edges occasionally to allow uncooked egg mixture to flow to bottom of skillet.
Sprinkle with cheese. Cover; cook an additional 1 minute or until cheese is melted. To serve, cut into wedges.
