Ingredients

carton (32 oz) Progresso™ chicken broth (4 cups)

tablespoons packed brown sugar

tablespoons soy sauce
2
tablespoons rice vinegar
2
teaspoons curry powder
1
small red bell pepper, coarsely chopped (1/2 cup)
1
small jalapeño chile, seeded, finely chopped (1 tablespoon)
2
cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
2
tablespoons chopped fresh cilantro, if desired

Steps

  • 1 In 3-quart saucepan, mix all ingredients except chicken and cilantro. Heat to boiling over medium-high heat. Reduce heat to medium. Simmer uncovered 3 to 5 minutes or until bell pepper is crisp-tender.
  • 2 Stir in chicken. Cook 1 to 2 minutes or until chicken is hot. Just before serving, add cilantro.

Expert Tips

Like spicy food? Add an additional tablespoon of finely chopped jalapeño chile.

Brown sugar, soy sauce and rice vinegar mimic the flavors of the fish sauce typically used in Thai cooking.
