1In small saucepan, bring rice and water to a boil over medium-high heat. Reduce heat; cover and simmer 15 to 18 minutes or until rice is tender and water is absorbed.
2Add all remaining ingredients except lettuce leaves to rice; remove from heat. Keep warm until serving time.
3To serve, spoon filling onto center of serving platter; place lettuce leaves around edge. Have guests spoon about 2 tablespoons filling onto 1 lettuce leaf; fold or roll leaf around filling. If desired, serve bundles with dipping sauces such as hoisin sauce or sweet-and-sour sauce.
