Ingredients

Salsa

  • 1/4 cup chopped red bell pepper
  • 1 seedless orange, peeled, chopped
  • 1 small pear, unpeeled, chopped
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons orange juice

Glaze

  • 1/3 cup honey
  • 1 chipotle chile in adobo sauce (from 11-oz. can), finely chopped
  • 2 tablespoons adobo sauce from chipotle chile can

Chicken

  • 4 boneless skinless chicken breast halves

Steps

  • 1
In medium bowl, combine all salsa ingredients; mix well. Set aside.
  • 2
In small bowl, combine all glaze ingredients; mix well. Reserve 1 tablespoon glaze. Brush half of remaining glaze over 1 side of each chicken breast half; place on broiler pan, glaze side up.
  • 3
Broil 4 to 6 inches from heat for 6 minutes. Turn chicken; brush with remaining glaze. Cook an additional 4 to 7 minutes or until chicken is fork-tender and juices run clear. Drizzle chicken with reserved 1 tablespoon glaze. To serve, spoon salsa over chicken.

  • Chipotle chiles are dried smoked jalapenos. They are sold pickled, dry or canned in adobo sauce.
  • To make clean-up easier, line the top part of the broiler pan with aluminum foil. Cut through the foil in a few spots to allow the grease from the meat to collect in the bottom half of the pan.
  • When using chilies canned in adobo sauce, any leftovers can be frozen to use another time.
  • Serve this sweet and spicy chicken dish with cornbread sticks and long grain white rice.
