Spicy Szechuan Turkey Stir-Fry

turkey breast tenderloin (1/2 to 3/4 lb), cut in half lengthwise, cut crosswise into thin slices

bag (16 oz) frozen broccoli, carrots & cauliflower

cup Szechuan spicy stir-fry sauce

    In 10-inch nonstick skillet, heat oil over medium-high heat until hot. Cook and stir turkey in oil 2 to 3 minutes or until no longer pink. Reduce heat to medium-low; add vegetables. Cover; cook 5 to 8 minutes or until vegetables are crisp-tender, stirring occasionally.

    Stir in Szechuan sauce; cook and stir 2 to 3 minutes or until hot.

Szechuan food is traditionally very spicy, and this stir-fry is no exception! To adjust the spiciness to your taste, stir regular stir-fry sauce into the Szechuan sauce.

Hot cooked rice, pineapple slices and fortune cookies round out this stir-fry meal.
