Expert Tips

  • This zingy chicken dish shows off the flavors of West Africa--peanuts, tomatoes and hot pepper.
  • Peanut butters vary in content. The simplest--and often most nutty tasting--are just ground peanuts processed to a spreading consistency. These sometimes are refrigerated; often , the oil separates, requiring you to mix it up before using. Other varieties may have sugar, salt, vegetable oil and other additives.
