Southwestern Rice Casserole

Ingredients

  • 3 cups cooked white rice (cooked as directed on package)
  • 1 cup frozen bell pepper stir-fry (from 1-lb. pkg.)
  • 1 (14.5-oz.) can diced peeled tomatoes with chili or salsa seasonings, undrained
  • 1 (8-oz.) can tomato sauce

    Heat oven to 350°F. In ungreased 1 1/2-quart casserole, combine all ingredients; mix well.

    Bake at 350°F. for 35 to 40 minutes or until thoroughly heated.

  • Long-grain, instant or converted rice all work equally well in this side dish.
  • This recipe can be assembled up to one day in advance, then covered and refrigerated. Uncover and bake it for 40 to 50 minutes.
