South-of-the-Border Steak with Corn Relish

Ingredients

Corn Relish

  • 1 cup chopped tomatoes
  • 1 cup chopped avocados
  • 1 (11-oz.) can whole kernel sweet corn, drained
  • 2 tablespoons chopped green onions
  • 3 tablespoons chopped fresh cilantro
  • 3 tablespoons white vinegar

Steaks

  • 6 (4 to 6-oz.) boneless beef rib eye steaks
  • 1 1/2 teaspoons garlic-pepper blend
  • 1 1/2 teaspoons chili powder

    In medium bowl, combine all corn relish ingredients; mix well. Cover; refrigerate until serving time.

    Rub steaks with garlic-pepper blend and chili powder; place on broiler pan. Broil 4 inches from heat for 10 to 15 minutes or until of desired doneness, turning once. Serve with corn relish.

  • Garlic-pepper blend is a mixture of black pepper, garlic and herbs such as oregano and thyme. Chili powder consists of ground dried chiles, garlic, oregano, cumin, coriander, cloves and salt.
  • Make the corn relish several hours in advance; cover and refrigerate it. The vinegar in the relish will help keep the avocado from discoloring.
