Slow-Cooker Southwestern Spice-Rubbed Turkey Thighs

Ingredients

  • 2 (3/4 to 1-lb.) turkey thighs, skin removed
  • 1 tablespoon olive oil
  • 1 teaspoon dried Cajun seasoning
  • 1/4 cup thick & chunky salsa
  • 1/4 cup sour cream

    Brush turkey thighs with oil; rub with Cajun seasoning. Place in single layer in 4 to 5-quart slow cooker.

    Cover; cook on Low setting for 7 to 8 hours.

    Just before serving, remove turkey from slow cooker; place on cutting board. Cut turkey into slices. Serve turkey with salsa and/or sour cream.

  • Large slow-cookers accommodate turkey thighs, but oval-shaped cookers handle them the bet. Arrange the turkey thighs in a single layer to ensure even cooking.
  • Seasonings can fade after hours of slow cooking. To perk up flavor, sprinkle the sliced turkey with additional Cajun seasoning just before serving.
  • Seal any leftover turkey in a resealable plastic food storage bag and refrigerate it for up to two days.
