Shrimp Scampi

Ingredients

  • 4 oz. uncooked fettuccine
  • 2 tablespoons margarine or butter
  • 1 tablespoon olive or vegetable oil
  • 4 garlic cloves, minced
  • 1/2 lb. uncooked medium shrimp, shelled, deveined
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon grated lemon peel
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 tablespoons dry white wine or chicken broth

    Cook fettuccine to desired doneness as directed on package.

    Meanwhile, in medium skillet, combine margarine and oil. Heat over medium heat until margarine is melted. Add garlic; cook and stir 1 minute. Add shrimp; cook and stir 1 minute. Add all remaining ingredients; cook and stir 1 to 2 minutes or until shrimp turn pink.

    Drain fettuccine. Serve shrimp mixture over fettuccine.

  • Scampi is the Italian word for the tail portion of a variety of lobsterettes or prawns. In the United States, scampi often refers to recipes combining shrimp, butter and garlic.
  • One-half pound of medium shrimp contains 15 to 17 pieces.
