1Place 4 squares of plastic wrap on counter. Fold 4 turkey slices in half; place 1 on each piece of plastic wrap. Spread each with about 1 tablespoon hummus. Top each with 3 slices cucumber.
2Fold remaining 4 turkey slices in half; place over cucumbers. Spread each with about 1 tablespoon hummus. Top each with olive slices and 1 slice cheese. Wrap each stack tightly in plastic wrap. Refrigerate or place in insulated cooler.
3To serve, unwrap stacks; place 1 stack in each croissant.
