Rum-Pecan Macaroons

Here’s a delicious rum-flavored pecan cookie made using Pillsbury® refrigerated sugar cookies – a delightful dessert treat! MORE+ LESS-

Ingredients

roll (18 oz) Pillsbury™ refrigerated sugar cookies
1 1/2
cups flaked or shredded coconut
1
cup chopped pecans
1 1/2
teaspoons rum extract
Candied red and green cherry halves or pecan halves

    Heat oven to 350ºF. In large bowl, break up cookie dough. Stir in coconut, chopped pecans and rum extract (dough will be stiff).

    Shape dough into 1-inch balls; place 2 inches apart on ungreased cookie sheets. Press cherry half in center of each cookie.

    Bake 9 to 13 minutes or until edges are golden brown. Immediately remove from cookie sheets.

  • Coconut stored for a long time can become dry. You may want to buy a new can or package for the best results.
