Ingredients

cups hot cooked brown rice (cooked as directed on package)

cup chicken broth

cup white wine or white grape juice

tablespoon cornstarch

boneless, skinless chicken breast halves, cut into thin strips

to 1/2 teaspoon dried rosemary leaves, crushed

cup sliced fresh mushrooms

cup sliced green onions

cup seedless red grapes

    In small bowl, combine broth, wine and cornstarch; blend well. Heat oil in large nonstick skillet over medium-high heat until hot. Add chicken and rosemary; cook and stir 4 to 5 minutes, or until chicken is no longer pink.

    Add mushrooms and green onions; cook and stir 2 minutes. Add grapes and broth mixture. Cook and stir until mixture is thoroughly heated and sauce is thickened. Serve over rice.

  • Brown rice is any rice that's still encased in its rough bran layer, which gives it a tan color. it has a slightly nut-like flavor from the endosperm. It takes 45 to 50 minutes to cook. Instant brown rice has been partially cooked and then dehydrated; it take 5 to 15 minutes to cook, depending on the brand.
  • Serve the chicken dish with steamed zucchini spears and whole wheat rolls.
